Baked Oatmeal
Have you run out of hot breakfast ideas? Here is one of our family favorites.
It is economical, fast and easy. Our children love it. It's a great way to cook something different but
with ordinary ingredients.

with ordinary ingredients.
1/3 C. oil
1 C. brown sugar
2 t. cinnamon
4 eggs beaten
6 C. oats
4 t. baking powder
2 C. milk
Add ingredients in order - mix together
Use parchment paper to cover or butter a 13 by 9 casserole dish.
Fill with mixture and bake for 30 - 40 minutes at 350 degrees.
This is a delicious way to prepare a hot, healthy dish.
Our family enjoys topping the baked oatmeal with vanilla yogurt and chopped walnuts.
Hard boiled eggs add a little extra protein.
Fresh or canned fruit compliments the meal perfectly.
Baked oatmeal is perfect for feeding a large group of people while costing very little. On occassion,
we will double the batch and freeze the extra if we know we are expecting company.
If using parchment paper, just slip the cooled oatmeal out of the dish.
Then you can divide the batch and place in freezer bags.
Place on a cookie sheet and put in the freezer.
After the oatmeal is frozen, the cookie sheet can be removed and
and the freezer bags can be neatly stacked in your freezer.
